Finally, I got time to post this easy to follow Chicken and Sausage Caesar Salad recipe which I made a week ago for dinner at home. Caesar salad usually comes with croutons, but I skipped that part and replaced it with sausages. I only use whatever ingredients that are ready in my refrigerator and kitchen, and turns out my husband, and mom in law was very happy with this salad. I would probably add some crispy bacon for the next salad creations, ha-ha.. Simple yet delicious. Let’s follow the easy steps below.
Ingredients:
- 2 skinless, boneless chicken breasts
- 1 large romaine lettuce (leaves separated)
- 3 boiled eggs
- 3 chicken sausages
- 6 cherry tomatoes
- Black Olives
For the dressing:
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 4 tbsp American Caesar dressing
- 1.5 tbsp sugar
- 3 tbsp olive oil
Preparation:
- Season chicken breast with salt and pepper, leave it for a while.
- Place pan over a medium heat for 1 min, until hot. Lay the chicken on the pan and cook the chicken 3 to 4 minutes per side.
- Then, cut the chicken sausages into bite-sized and stir-fry for a few minutes.
- Chop the lettuce and transfer to a bowl.
- Cut the chicken into bite-size pieces and add into the bowl.
- Mix all the dressing, add to the bowl and mix everything.
- Set up the mixture to the plates, add the chicken sausage + slices of black olives + boiled eggs
- Garnish with slices of cherry tomatoes
- Sprinkle the Parmesan Cheese on top and serve straight away.
If your salad dressing is thicker, stir in a few tbsp water to thin it. I added 2 tbsp water to create a lighter dressing texture.
