[RECIPE] Special Wonton Soup (Pork and Shrimp)

It has been a long time I haven’t made my favorite Special Wonton Soup (Pork and Shrimp) again since we’re too busy with our daily routines. Actually, I’ve shared this Recipe before if you ever noticed my very first blog on http://mulliechan.com/2011/03/21/try-this-wonton-soup-its-yummy/ back in the year 2011. Yup, I wrote it 4 years ago from now! It’s been a while.. Ha-ha.. Because we’re not feeling well since the end of last weekend, and it has been raining all day, so I chose just to stay at home and make our favorite Wonton Soup again. So, here I am, rewrite and reshare my simple recipe to make a classic homemade Special Wonton Soup with pork and shrimp for you. The result was indeed delicious, yes!! My mom is a good cook, and she never failed me with her menus. I’m glad I was able to get some of her favorite recipes as well; that’s why it’s special to me! However, if you prefer to eat the wonton alone without soup, you can fry the wonton in any way you like.

This recipe is for 2-3 persons.

Ingredients:

  • 3 tbsp minced meat of pork (you can substitute it with chicken or beef meat)
  • 20 pieces shrimp meat, finely chopped
  • 2 tbsp finely chopped shiitake mushrooms
  • 2 tbsp finely chopped onions
  • 1 tbsp finely chopped garlic
  • 2 tbsp coarsely chopped fresh scallions
  • 1 tbsp finely chopped fresh ginger (1 cm)
  • 1 tsp sesame oil
  • 1 tsp salty soy sauce
  • 1/2 tsp salt + 1/2 tsp white pepper
  • 1 set of square wonton wrappers (I usually buy the “AA” brand in a fresh market, but since it was sold out last time, I use the other brand which is “AM”)
  • 1000 ml chicken broth

Method #1: Prepare the filling

  1. Place 3 tbsp minced pork + shrimp + mushroom to the empty bowl
  2. Add 1 tbsp finely chopped onions + 1/2 tbsp finely chopped garlic + 1 tbsp finely sliced fresh scallions
  3. Add 1 tbsp finely chopped fresh ginger + 1 tsp sesame oil + 1 tsp salty soy sauce + 1/2 tsp salt + 1/2 tsp white pepper
  4. Mix until thoroughly combined

Method #2: Make wontons

  1. Set aside cool water, and prepare the wonton wrappers
  2. Place a teaspoonful of the filling mixture on the edge of each wonton wrapper
  3. Roll the wonton wrappers, two times from the edge
  4. Using your fingers, lightly wet the edges of the wonton
  5. Bring 2 opposite corners of the wonton together to form a triangle and enclose filling
  6. Make more wontons in the same manner

Method #3: Make the broth

  1. In a large pan, stir fry the rest of onions and garlic
  2. Add 1000 ml chicken broth and bring to a boil
  3. Reduce the heat to medium-low and add all the wontons. But remember, not to overcrowd the pot!! Cook them in batches if you are cooking lots
  4. Stir the water gently and bring to boil again for 3-4 minutes (or until the wontons float to the top)
  5. Add fresh vegetables as you like, and reduce heat to low. Cook for 1 minute.
  6. Since I made 24 wontons, so I serve up to 8 wontons per bowl for three persons at home (including me). Finish off with coarsely chopped scallions, and I also add fried garlic on top of it. The fried garlic, add more flavor to the soup. So fragrant and even more delicious!!
