[RECIPE] Pan-Seared Salmon Salad with Lemon Dressing

Here’s a new recipe for you! We’re back to our clean eating program at home, and I cooked Pan Seared Salmon Salad with Lemon Dressing for dinner. Yeah, you know, it’s because eating too much food on the weekends sometimes made us feel guilty, especially when cholesterol and fat intake increases. Ha-ha.. My husband asked for salmon meat in his salad, so I came up with this recipe which contained some of the nutritious food out there, such as Salmon and Avocado. I also chose Lemon Dressing because it tastes simply amazing when drizzled over salads. Let’s follow the easy steps below!

Ingredients:

  1. 2 tbsp Extra-Virgin Olive Oil
  2. 2 tbsp fresh lemon juice
  3. One big slice of fresh salmon fillet (skin on or skin off depends on your personal taste)
  4. Fresh mix vegetables (organic from the supermarket)
  5. Scallions, thinly sliced
  6. Lemon slices, for garnish
  7. Tomato slices, for garnish
  8. Salt and pepper
  9. Seasonal fruit (optional) -> I chose to add fresh avocado because avocados are loaded with healthy fats, fiber, and various important nutrients. Its creamy texture and rich taste also suitable for my salad.

Preparation:

  1. Cut the salmon fillet into half. Place salmon on a plate, and then season them with salt and pepper. Leave it for a while.
  2. Heat a large non-stick pan over medium-high heat with 2 tbsp olive oil.
  3. Place salmon in a pan, and reduce heat to medium-low. Allow to cook for 2-3 minutes for a medium cooked. Do not forget to flip the salmon, and cook about 2-3 minutes more, or until still just barely pink in the center. Set aside.
  4. In a large bowl, whisk 2 tbsp of olive oil with lemon juice + salt and pepper
  5. Add the fresh vegetables to the bowl and toss well.
  6. Transfer the salad to plates, top with sliced pan-seared salmon, and chopped avocado.
  7. Garnish with lemon slices, tomato slices and chopped scallions on the plate. Serve.

Voila! All the simple steps above creates not only a delicious and refreshing salad, but also can boost our mood and stamina as well. Zesty and tangy lemon, and olive oil flavors blend in this dressing was wonderfully light and can be a clean addition to any salad. Feel free to change the ingredients to delight your taste buds.
