I made Chicken with Lemon and Garlic + Potato Wedges Rosemary for dinner a few days ago, and here I wanted to share the easy recipe for you. I always like to cook delicious, simple and homely meals whenever I can at home. And I assure you, this recipe is quite simple and easy to follow. You only need to prepare all the ingredients and with a little effort, you’ll get tender meat, with a slightly salty and a hint of the sour taste of lemon juice. This recipe can be a healthy option if you’re also trying to avoid too many fried foods like I do. Well, you can always customize the recipe, and if you don’t like chicken breast (less fat), substitute with chicken thighs would be fine.
Ingredients: (for 2-3 persons)
- 2 skinless chicken breast fillets
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp paprika
- 2 tbsp lemon juice
- salt and black pepper
- dried parsley
Preparation:
- Slice all the chicken meat into strips.
- Heat the oil in a large frying pan. Stir-fry the shallot, garlic, and paprika until aromatic.
- Add the chicken strips and cooked over a high heat until the chicken cooked through.
- Add the lemon juice and parsley, then season with salt and pepper to taste (suit to your preference).
- Served immediately on warmed plates, with a slice of lemon and potato wedges. I paired it with Potato Wedges with Rosemary (see the recipe on below post).

To make Potato Wedges with Rosemary:
- Wash and dry 2 potatoes, skin off.
- Cut the potatoes into large wedges, and place into a bowl.
- Add 2 tbsp olive oil + 1/2 tsp salt + 1/2 tsp black pepper + 1 tsp dried rosemary, and mix well.
- Transfer the potatoes to Happy Call Cooking pan and cooked all the way through (you can also bake these potatoes in the oven until golden brown for 20-30 minutes).
