[RECIPE] Roasted Chicken with Vegetables

I finally had a chance to cook my own Roasted Chicken with Vegetables at home, and now I want to share this easy yummy recipe with you. I keep making delicious and healthy meals at home since I have this 4 in 1 Oven Jumbo OX-898BR, one of the best products from Oxone Indonesia. Talking about healthy food, yes, I’m trying to avoid cooking fried foods at home and avoid eating fried foods outside. So I made this juicy, flavorful roasted chicken for dinner with my family, and it was so easy and delicious!

Ingredients for the Roasted Chicken by Myfunfoodiary

A whole roasted chicken is a nice option to be enjoyed by at least three persons in the house. It was a simple roast chicken with an additional thyme and drizzled with olive oil for extra flavor and aroma. I hope you like it, and please feel free to adjust the recipes based on your preferences.

Ingredients: (for 3 persons)
1 whole chicken, rinse, and remove any excess fat or leftover feathers
1 lemon, halved
2 big carrots, thinly sliced
2 tablespoons dried thyme
4 tablespoons olive oil
Black pepper + salt
Garlic + onion
Leek, chopped

Step by Step Preparing the Roasted Chicken by Myfunfoodiary

Preparation:
1. Preheat oven to 200c for 5 minutes.
2. Brush the outside of the chicken with melted butter and rub all over the chicken with salt and pepper.
3. Liberally salt and pepper inside the chicken, then stuff the cavity with half lemon, dried thyme, and garlic.
4. Place onions, garlic, and carrots into the roasting tray, toss salt and pepper, drizzle with olive oil.
5. Place the chicken on top of the vegetables, sprinkle with leek, and then roast the chicken for 1.5/2 hours. Often check the oven, and see if the vegetables look dry, add a splash of water to the tray to stop them burning.
6. Remove the chicken and vegetables to a platter, and cover it with aluminum foil for around 20 minutes. Slice the chicken and serve it with vegetables.
