"Roast "Ingredients

Ingredients: (for 3 persons)

Dried Fettuccine pasta

Half size of red bell pepper, sliced

3 tomatoes, sliced

3 garlic cloves, thinly sliced

2 teaspoons dried thyme

4 tablespoons olive oil

12 pieces peeled prawn

3 tablespoons ricotta cheese

Rocket leaves/mixed vegetables

I use a manual method to calculate the ratio of Spaghetti or Fettuccine per person. Usually, when cooking dry pasta at home, I only used 40 sheets of dry spaghetti for one person, and 30 sheets of dried fettuccine for one person because these sizes fit for our meal. Of course, this ratio might be different with you, so please adjust by yourself.

"Roast

Preparation:

1. Preheat oven to 200c for 10 minutes.

2. Combine tomato, garlic, thyme, red bell pepper and olive oil on a baking tray. Roast for 7 minutes.

3. Add prawns to the tray. Roast for 5 minutes or until the prawns change color.

4. While waiting for the oven, cook the pasta in a large saucepan of boiling salted water (2 Tbsp salt) until al dente (cooking time varies, and it depends on the amount of pasta). Drain. Return to pan.

5. Add the tomato mixture from the oven, and ricotta cheese to pasta. Add 2 tbsp of olive oil. Then, toss to combine.

6. Place the vegetables on top, add some Parmesan cheese if you like, and serve immediately.

Happy cooking and we hope you enjoy the recipe!

Cheers,
