The main thing is, you need to find good yellow tofu, soft on the inside, yet firm on the exterior. I bought this brand: Tahu Kuning Organic Talaga for IDR 31K (4 pieces in one pack) at All Fresh Supermarket, West Jakarta. And I cut them into half, to make 8 servings. If you can’t find the same brand, please use whatever yellow tofu you can find in the market. But, make sure the texture is quite firm, and do not buy silken tofu or egg tofu because both tofus are not suitable for this recipe. So, happy cooking! We hope you enjoy the recipe! Bahan adonan tepung aci:
Adonan tahap 1 (First step: Part A)
– 60gram tepung kanji/tapioka (60gram starch flour)
– 180ml air (180ml water)
– aduk rata kedua bahan diatas (mix well both ingredients together)
– masak adonan dalam wajan dengan api sedang, aduk terus hingga adonan menjadi seperti lem (cook in medium heat, keep stirring constantly until the texture becomes thick like glue)
Adonan tahap 2, aduk rata (part B):
– 60 gram tepung tapioka (60 grams starch / tapioca flour)
– 1/4 sendok teh gula pasir (1/4 teaspoon sugar)
– 1/4 sendok teh garam (1/4 teaspoon salt)
– 1/4 sendok teh kaldu ayam (1/4 teaspoon powdered chicken stock)
– 200gram udang yang sudah dicincang (200grams minced shrimp)
– 2 siung bawang putih (2 cloves of garlic)
– daun bawang iris (green onion)
Adonan tahap 2, aduk rata (part B):
– 60 gram tepung tapioka (60 grams starch / tapioca flour)
– 1/4 sendok teh gula pasir (1/4 teaspoon sugar)
– 1/4 sendok teh garam (1/4 teaspoon salt)
– 1/4 sendok teh kaldu ayam (1/4 teaspoon powdered chicken stock)
– 200gram udang yang sudah dicincang (200grams minced shrimp)
– 2 siung bawang putih (2 cloves of garlic)
– daun bawang iris (green onion)
Adonan tahap 3 (part C):
– campur adonan part A (ONLY USE HALF OF IT) + part B (take HALF of part A + mix with part B)
– uleni semua adonan hingga rata (mix everything, knead until evenly distributed)
Cara Memasak Tahu Aci Tegal (Cooking Directions to cook Fried Tofu with shrimp):
1. Belah tahu kuning menjadi 2 bagian, dan kerok sedikit bagian tengahnya (cut the yellow tofu into 2 parts, and scrape a little in the middle)
2. Masukkan adonan yang sudah diuleni tadi (part C) ke bagian tengah tahu, dan ratakan ke atasnya (put the kneaded dough part C into the middle of the tofu, and spread it evenly on top)
3. Goreng tahu yang sudah siap, di minyak panas dengan api sedang (once ready, fry all tofu in hot oil over medium heat)
4. Angkat dan sajikan dengan cabe rawit atau sambal kecap (Transfer the tofu to paper towels to drain and serve with your favorite chili)
